Cottage Cheese Pancakes

Ingredients

  • 1 ⅓ cups small curd cottage cheese
  • 3 large eggs (or ¾ cup egg substitute)
  • 1 cup whole milk
  • 3 tablespoons sugar
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 ½ cups all-purpose flour
  • Cooking spray
  • Honey (optional for serving)
  • Maple syrup (optional for serving)

Steps

    1. Whisk cottage cheese, eggs, and milk in large bowl until blended. Add sugar, salt, cinnamon, baking powder, and flour; whisk until combined and smooth.
    2. Preheat large, nonstick sauté pan on medium 2–3 minutes. Remove pan from heat and coat with spray. Return to heat and add ¼ cup batter (for each pancake) to pan. Cook 1–2 minutes on each side until golden and center is 160°F. Remove pancakes from pan; cover to keep warm. Repeat with remaining batter (using additional spray, if needed).
    3. Arrange pancakes on serving plates. Drizzle with honey or maple syrup, if using. Serve.
