Ingredients
- 1 ⅓ cups small curd cottage cheese
- 3 large eggs (or ¾ cup egg substitute)
- 1 cup whole milk
- 3 tablespoons sugar
- ½ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 ½ cups all-purpose flour
- Cooking spray
- Honey (optional for serving)
- Maple syrup (optional for serving)
Steps
- Whisk cottage cheese, eggs, and milk in large bowl until blended. Add sugar, salt, cinnamon, baking powder, and flour; whisk until combined and smooth.
- Preheat large, nonstick sauté pan on medium 2–3 minutes. Remove pan from heat and coat with spray. Return to heat and add ¼ cup batter (for each pancake) to pan. Cook 1–2 minutes on each side until golden and center is 160°F. Remove pancakes from pan; cover to keep warm. Repeat with remaining batter (using additional spray, if needed).
- Arrange pancakes on serving plates. Drizzle with honey or maple syrup, if using. Serve.
