Ingredients
- 4 oz plain (or flavored) cream cheese
- Parchment paper
- 18 chocolate (or golden) sandwich cookies
- For Birthday Party Cookie Truffles
- 20 birthday candles (optional)
- 10 oz white melting wafers
- 2 teaspoons gold (or silver) glitter gel
- 2 tablespoons gold decorative sprinkles
- 2 tablespoons multi-colored decorative sprinkles
- For Chocolate Almond-Coconut Cookie Truffles
- ¼ cup chocolate almonds
- ¼ cup sweetened coconut flakes
- 10 oz dark (or milk chocolate-flavored) melting wafers
- For Minty-Marbled Cookie Truffles
- ¼ cup peppermint candies (or candy canes)
- 10 oz white melting wafers
- 1 cup milk chocolate-flavored melting wafers
- ⅛ teaspoon green food coloring gel
- ⅛ teaspoon blue (or red) food coloring gel
- For Churro-Style Cookie Truffles
- 1 cup cinnamon toast-flavored cereal
- ½ cup white melting wafers
- ½ teaspoon ground cinnamon
- 2 tablespoons gold decorative sprinkles
Steps
- Make truffle base. Cube cream cheese and place in medium bowl to soften. Line baking sheet with parchment paper. Place cookies in food processor bowl (in batches, if needed); pulse until finely crushed. Add cream cheese to cookie crumbs and pulse until thoroughly blended.
- Scoop (or form) cookie mixture into 20 (1-inch) truffles. Arrange on baking sheet and chill 30 minutes. Meanwhile, prepare desired decorations.
- Melt wafers following package instructions. Dip truffles into coating (in batches), letting excess drip off; return to baking sheet. Decorate before coating sets, then chill until ready to serve.
Birthday Party Cookie Truffles: Cut 1 inch off bottom of each candle, if using. Decorate each truffle with glitter gel, sprinkles, and candle.
Chocolate Almond-Coconut Cookie Truffles: Place almonds in food processor bowl and pulse until finely chopped. Add coconut and pulse to blend. Sprinkle top of each truffle with almond mixture.
Minty-Marbled Cookie Truffles: Crush peppermint candies finely. Divide ¼ cup melted white coating between 2 bowls. Add green gel to 1 bowl and blue gel to second bowl; stir to blend. Drizzle blue, green, and chocolate-flavored coatings over bowl of remaining white coating. Swirl truffles in coating (in batches), letting excess drip off, then sprinkle with peppermints.
Churro-Style Cookie Truffles: Prepare cookie truffle base using brown sugar-cinnamon cream cheese instead of plain. Crush cereal finely and roll truffles in cereal crumbs to coat evenly. Decorate with drizzle of white coating and dash each of cinnamon and gold sprinkles.
