1 cup medium fine–ground Colombian coffee

Steps
Bring water and panela to a boil in a large saucepan; whisk until dissolved. Remove from heat, stir in coffee, and let steep 3–4 minutes.
Strain coffee through cheesecloth (or fine-mesh strainer). Serve.
