Coconut-Grenadine Barfi

Ingredients

  • Nonstick aluminum foil
  • 1 tablespoon unsalted butter
  • 3 cups unsweetened shredded coconut (+ more, optional)
  • ¾ cup grenadine
  • ⅓ cup powdered milk
  • 3 tablespoons roasted, shelled pistachios

Steps

    1. Line 9-inch baking dish with foil. Melt butter. Combine coconut, grenadine, milk, and butter, then press mixture firmly into pan.
    2. Chop pistachios; press pistachios and additional coconut, if using, gently into mixture. Chill 2 hours. Cut into squares and serve.
