- 4 clementines
- 1 cup sour cream
- 2 tablespoons brown sugar
- 1 cup fresh pineapple chunks + 2 tablespoons pineapple juice
- 1 cup fresh blueberries
- ½ cup shredded sweetened coconut
- ⅓ cup chopped pecans
Steps
- Peel clementines and separate segments. Combine sour cream, brown sugar, and pineapple juice in medium bowl.
- Stir in remaining ingredients until evenly coated. Chill until ready to serve.

- Main dish: Preheat oven to 375°F. Season 1 (6 lb) roasting chicken with salt and pepper; place in roasting pan. Cut 2 clementines in half and place in cavity of chicken with 2 cloves garlic and 3 sprigs fresh rosemary (wash hands). Bake 1–1 ½ hours until chicken is 165°F.
