Ingredients

  • 4 clementines
  • 1 cup sour cream
  • 2 tablespoons brown sugar
  • 1 cup fresh pineapple chunks + 2 tablespoons pineapple juice
  • 1 cup fresh blueberries
  • ½ cup shredded sweetened coconut
  • ⅓ cup chopped pecans

Steps

    1. Peel clementines and separate segments. Combine sour cream, brown sugar, and pineapple juice in medium bowl.
    2. Stir in remaining ingredients until evenly coated. Chill until ready to serve.
Other Preparation Methods
    • Main dish: Preheat oven to 375°F. Season 1 (6 lb) roasting chicken with salt and pepper; place in roasting pan. Cut 2 clementines in half and place in cavity of chicken with 2 cloves garlic and 3 sprigs fresh rosemary (wash hands). Bake 1–1 ½ hours until chicken is 165°F.
