Ingredients
- 4 cloves garlic
- 2 limes, for juice
- 2 tablespoons olive oil
- 8 oz trinity mix (diced fresh onions, bell peppers, and celery)
- 1 ½ lb lean ground beef (7% fat)
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- ½ teaspoon kosher salt
- ½ teaspoon pepper
- 1 (15 oz) can no-salt-added tomato sauce
- ½ cup sliced, stuffed green olives
- ¼ cup golden raisins
- 1 tablespoon capers
Steps
- Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Chop garlic; juice limes (2 tablespoons). Place oil in pan, then add trinity mix; cook 4–5 minutes, stirring occasionally, until onions are tender and beginning to brown. Stir in garlic; cook and stir 1–2 minutes until garlic is golden.
- Add beef, oregano, paprika, salt, and pepper; brown 6–8 minutes, stirring to crumble meat, until no pink remains and beef is 160°F. Reduce heat to low; stir in tomato sauce, lime juice, olives, raisins, and capers. Cover and simmer 20–25 minutes until sauce has thickened. Serve.
