Citrus Pico de Gallo

Ingredients

  • 1 orange, for zest/segments
  • 1 medium tomato
  • 3 cloves garlic
  • ½ bunch fresh cilantro
  • 1 lime, for juice
  • ½ cup diced fresh red onions
  • ½ cup tri-pepper mix (diced fresh green, red, and yellow bell peppers)
  • ½ teaspoon kosher salt
  • Tortilla chips (optional for dipping)

Steps

    1. Zest orange (1 teaspoon), then peel and cut into segments. Chop tomato, discarding seeds. Chop garlic and cilantro finely. Juice lime (1 teaspoon).
    2. Place all ingredients (except chips) in large bowl and stir until blended. Serve with tortilla chips, if using.
