Citrus Jicama-Avocado Salad

Ingredients

  • 1 small red onion
  • 1 medium jicama
  • 3 medium Hass avocados
  • ½ bunch cilantro
  • 2 limes
  • ¾ cup grapefruit juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ¼ teaspoon jalapeño green pepper sauce
  • ¼ cup extra-virgin olive oil

Steps

    1. Thinly slice onion; peel jicama and cut into thin matchsticks. Peel, pit, and thinly slice avocados. Coarsely chop cilantro (about ½ cup). Juice limes (4 tablespoons).
    2. Combine in medium bowl: lime and grapefruit juices, salt, pepper, green pepper sauce, and one-half chopped cilantro until blended; whisk in oil until blended. Add to large bowl: onions, jicama, avocadoes, remaining one-half chopped cilantro and dressing. Toss to coat well. Serve.
