Ingredients
- 1 small red onion
- 1 medium jicama
- 3 medium Hass avocados
- ½ bunch cilantro
- 2 limes
- ¾ cup grapefruit juice
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- ¼ teaspoon jalapeño green pepper sauce
- ¼ cup extra-virgin olive oil
Steps
- Thinly slice onion; peel jicama and cut into thin matchsticks. Peel, pit, and thinly slice avocados. Coarsely chop cilantro (about ½ cup). Juice limes (4 tablespoons).
- Combine in medium bowl: lime and grapefruit juices, salt, pepper, green pepper sauce, and one-half chopped cilantro until blended; whisk in oil until blended. Add to large bowl: onions, jicama, avocadoes, remaining one-half chopped cilantro and dressing. Toss to coat well. Serve.
