Citrus-Herb Snowball Cookies

Ingredients

  • ½ cup unsalted butter, softened
  • Cooking spray
  • 1 orange, for zest/juice
  • 1 tablespoon + 1 ½ teaspoons fresh rosemary, finely chopped
  • 1 ½ cups walnut (or pecan) pieces, finely chopped
  • 1 cup flour
  • ¼ teaspoon kosher salt
  • ¾ cup powdered sugar, divided
  • 1 teaspoon vanilla extract

Steps

    1. Set butter out to soften. Preheat oven to 325°F. Coat baking sheet with spray. Zest orange (2 tablespoons); and squeeze for juice (1 tablespoon). Chop rosemary and walnuts.
    2. Combine flour, walnuts, rosemary, salt, and ¼ cup sugar until well blended. Place butter in large bowl and beat with electric mixer until fluffy. Beat in vanilla, orange zest, and juice until blended. Gently stir (fold) in flour mixture until dough forms.
    3. Roll dough into 1-inch balls and place on prepared baking sheet. Bake 20 minutes; remove from oven and allow cookies to cool completely on baking sheet. Place remaining ½ cup sugar in small bowl. Roll cookies in sugar until well coated. Serve.
