Ingredients
For the slaw
- ½ head red cabbage (½ lb)
- ½ head green cabbage (½ lb)
- 1 medium radicchio
- 2 large carrots
- 4 green onions, thinly sliced
- 1 small jalapeño pepper, thinly sliced
- ½ cup fresh cilantro, coarsely chopped
For the vinaigrette
- 6 limes, for juice
- 1 teaspoon ground cumin
- 1 tablespoon agave nectar
- ¼ cup olive oil
- 1 teaspoon kosher salt
- ½ teaspoon pepper
Steps
- Prepare slaw. Slice red cabbage, green cabbage, and radicchio thinly (about 2 cups each). Peel and shave carrots into ribbons (1 ½ cups). Slice onions and jalapeño thinly. Chop cilantro. Combine all slaw ingredients in a large bowl; mix until blended.
- Prepare vinaigrette. Juice limes (¾ cup) and combine in small bowl with remaining ingredients; whisk until blended.
- Pour vinaigrette over cabbage mixture; toss to coat. Serve.
