Ingredients
- 3 tablespoons extra-virgin olive oil
- 1 cup long-grain white rice
- 2 cups water
- 1 bay leaf
- 1 teaspoon kosher salt
- ½ cup fresh cilantro
- 1 (15.25 oz) can black beans
- 2 limes, for zest/juice
Steps
- Heat oil in medium saucepan on medium-high 2–3 minutes. Add rice; cook and stir 1 minute until rice is lightly toasted.
- Stir in water, bay leaf, and salt; bring to a boil. Reduce heat to low; cover and cook 20–25 minutes (do not remove lid) until liquid is absorbed and rice is tender. Drain and rinse beans.
- Remove bay leaf. Stir beans into rice and cook 2 more minutes, stirring occasionally, until beans are hot. Chop cilantro coarsely. Zest lime (1 teaspoon) and juice (2 tablespoons). Stir cilantro and lime zest and juice into rice. Serve.
