Cider-Glazed Sweet Potatoes and Pears

Ingredients

  • 3 medium sweet potatoes (about 2 lb)
  • 4 medium, ripe pears (about 2 lb)
  • 1 lemon, for juice
  • 3 tablespoons cornstarch
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground allspice
  • 2 cups apple cider (or apple juice)
  • ½ cup mixed (or golden) raisins

Steps

    1. Peel sweet potatoes; peel and core pears. Cut both in half lengthwise, then into 1-inch-thick pieces. Place potatoes in microwave-safe bowl and cover; microwave on HIGH 5 minutes. Add pears and cover; microwave on HIGH 3 more minutes.
    2. Meanwhile, juice lemon (2 tablespoons). Combine lemon juice, cornstarch, salt, allspice, apple cider, and raisins; whisk until combined. Transfer to large saucepan on medium; cook and stir 3–4 minutes until mixture thickens.
    3. Stir in pears and potatoes gently; simmer 2–3 minutes, stirring occasionally, until potatoes and pears are fork-tender. Serve.
