Ingredients
- 1 cup frozen green peas
- 10 oz fresh cauliflower florets
- ½ oz fresh basil leaves
- ½ cup roasted cashews
- ¼ cup plain, nonfat Greek yogurt (or mayonnaise)
- ¼ cup ginger (or sesame) salad dressing
- ⅓ cup sliced green onions
- ¼ teaspoon kosher salt
Steps
- Thaw peas in colander under cool running water. Cut cauliflower into ½-inch pieces; chop basil and cashews. Combine yogurt and dressing in salad bowl.
- Add remaining ingredients to dressing; toss to coat. Let stand 10 minutes for flavors to blend. Serve.
