Chopped Cauliflower Salad

Ingredients

  • 1 cup frozen green peas
  • 10 oz fresh cauliflower florets
  • ½ oz fresh basil leaves
  • ½ cup roasted cashews
  • ¼ cup plain, nonfat Greek yogurt (or mayonnaise)
  • ¼ cup ginger (or sesame) salad dressing
  • ⅓ cup sliced green onions
  • ¼ teaspoon kosher salt

Steps

    1. Thaw peas in colander under cool running water. Cut cauliflower into ½-inch pieces; chop basil and cashews. Combine yogurt and dressing in salad bowl.
    2. Add remaining ingredients to dressing; toss to coat. Let stand 10 minutes for flavors to blend. Serve.
