Chopped Brussels Sprout Salad

Ingredients

  • 1 lb fresh Brussels sprouts
  • ⅓ cup smoked almonds
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons lemon juice
  • 1 teaspoon minced garlic
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • 3 tablespoons avocado oil
  • 1 cup shaved (or shredded) Parmesan cheese
  • ½ cup cooked bacon pieces
  • 1 (4.4 oz) container pomegranate arils

Steps

    1. Halve sprouts and slice thinly, discarding root ends. Chop almonds coarsely.
    2. Combine in large bowl: Worcestershire sauce, lemon juice, garlic, salt, and pepper until blended; add oil and whisk to blend. Add sprouts, Parmesan, bacon, almonds, and pomegranate arils; toss to coat. Serve.
    Chef's tip: Place halved Brussels sprouts in food processor bowl and pulse until shredded to reduce prep time.
