Chocolate Chip Red Velvet Muffins

Ingredients
  • 24 cupcake liners
  • ½ cup unsalted butter
  • 1 ½ cups sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs (or ½ cup egg substitute)
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon kosher salt
  • 1 (1 oz) bottle red food coloring
  • 2 ¼ cups all-purpose flour
  • 1 cup low-fat buttermilk
  • 1 teaspoon baking soda
  • 1 tablespoon white vinegar
  • 1 cup semisweet chocolate morsels
Steps
  1. Set butter out to soften. Preheat oven to 350°F. Place cupcake liners in muffin pans. Place butter and sugar in large bowl; beat with electric mixer 1–2 minutes until pale yellow and fluffy. Mix in vanilla, then add eggs 1 at a time, mixing until blended. Add cocoa, salt, and food coloring; mix until blended.
  2. Alternate adding flour and buttermilk, mixing on LOW, until blended. Combine baking soda and vinegar; mix into batter. Stir in morsels.
  3. Spoon batter into cupcake liners filling two-thirds full. Bake 15–18 minutes until toothpick inserted in center comes out clean. Let stand 10 minutes on wire rack to cool. Serve.
Chef's Tip: Combine 6 tablespoons powdered sugar and 1 tablespoon milk or water to make a glaze. Drizzle over cooled muffins for an even sweeter treat.
