Chocolate-Almond Power Bars

Ingredients

  • Plastic wrap
  • 1 ½ cups almond flour
  • ¼ cup powdered (or malted) milk
  • 6 tablespoons coconut oil, divided
  • 4 tablespoons maple syrup, divided
  • ¼ teaspoon kosher salt, divided
  • ½ cup almond (or creamy peanut) butter
  • ½ cup sliced almonds (or peanuts)
  • ½ cup bittersweet (or dark) chocolate morsels

Steps

    1. Line 9- x 5-inch loaf pan with plastic wrap, with overlapping sides. Combine almond flour, powdered milk, 3 tablespoons coconut oil, 2 tablespoons maple syrup, and ⅛ teaspoon salt; blend until dough forms. Press into bottom of pan in an even layer. Freeze 30 minutes.
    2. Combine almond butter, remaining 3 tablespoons coconut oil, 2 tablespoons maple syrup, and almonds, stir to blend. Top almond crust evenly with peanut butter mixture. Freeze 30 minutes.
    3. Cut into 16 small bars. Place chocolate morsels in a microwave safe dish. Microwave on HIGH 60-90 seconds, stirring every 30 seconds, or until melted. Drizzle or dip each bar into chocolate. Sprinkle with remaining salt. Freeze until set. Wrap tightly until ready to serve.

    Chef's Tip: Try making individual bars in ice cube trays, just coat each well with coconut oil before assembling. (Makes about 24 cubes.) Adults can use whey powder in place of milk powder for extra protein.
