Chipotle Mashed Potatoes

Ingredients

  • 1 (24 oz) bag baby gold potatoes
  • ¼ bunch fresh cilantro
  • 2 teaspoons sazón with culantro and achiote
  • ½ cup sour cream
  • 1 teaspoon chipotle hot sauce

Steps

    1. Halve potatoes; chop cilantro coarsely.
    2. Place potatoes in microwave-safe dish and cover; microwave on HIGH 8–10 minutes until tender when pierced with a fork.
    3. Mash potatoes until smooth. Stir in cilantro, sazón, sour cream, and hot sauce. Serve.
