Ingredients
- 1 small red onion
- 1 lemon, for wedges
- 3 oz tempeh
- 1 tablespoon olive oil
- 8 large butter lettuce leaves
- 8 tablespoons garlic hummus
- 8 tablespoons sea salt (or falafel) crunchy chickpeas
- 1 tablespoon lightly dried parsley
Steps
- Slice onion thinly (about 8 tablespoons). Cut lemon into wedges. Crumble tempeh (about 8 tablespoons), then cook following package instructions (using oil).
- Arrange lettuce leaves on flat work surface. Top with 1 tablespoon each hummus, tempeh, onions, and chickpeas. Sprinkle with parsley and serve with lemon wedges.
