Chicken Torta Sandwich

Ingredients

  • 3 tablespoons light brown sugar
  • ¼ cup lime juice
  • ¼ teaspoon kosher salt
  • 8 oz diced red onions
  • ¼ cup diced pickled jalapeños
  • 1 tablespoon chunky garlic stir-in paste
  • ½ cup mayonnaise
  • 1 (1.25 oz) packet taco seasoning
  • 1 lb fresh chicken tenderloins
  • 1 Hass avocado
  • 4 hoagie rolls
  • 1 cup shredded Mexican-style cheese blend

Steps

    1. Preheat oven to 400°F. Combine in medium bowl: 1 tablespoon brown sugar, lime juice, salt, and onions until blended; set aside. Drain jalapeños; combine with garlic paste, and mayonnaise in separate small bowl until blended.
    2. Combine taco seasoning and remaining 2 tablespoons brown sugar in a shallow dish; press chicken into mixture until coated, then arrange on baking sheet (wash hands). Bake 8–10 minutes, turning occasionally, until sugar has caramelized and chicken is 165°F.
    3. Halve avocado; scoop out flesh and slice thinly. Spread mayonnaise mixture inside rolls, then divide chicken and cheese evenly among rolls. Place sandwiches on baking sheet and bake 3–4 minutes until cheese is melted. Top each with even amounts avocado and pickled onions; serve.
