Chicken Stir-Fry with Brown Rice

Ingredients

  • 2 ¼ cups water
  • 10 oz diced frozen chicken breast
  • 2 cups instant brown rice
  • 2 tablespoons sesame oil
  • 2 tablespoons minced garlic
  • 1 lb roast, steak, and pizza topping vegetables (sliced fresh mushrooms, onions, and bell peppers)
  • ¾ cup stir-fry sauce

Steps

    1. Bring water to boil in medium saucepan for rice. Place chicken in microwave-safe dish; cover and microwave on HIGH 5 minutes to thaw.
    2. Stir rice into boiling water. Reduce heat to low, cover, and simmer 10 minutes.
    3. Preheat large sauté pan (or wok) on high 2–3 minutes. Place oil and garlic in pan (pan should sizzle). Add vegetables and cook, stirring occasionally, 6 minutes.
    4. Drain chicken, if needed, and add to pan; sauté 2 minutes. Add stir-fry sauce and cook, stirring continuously, 2 minutes until liquid reduces slightly. Serve chicken over rice.
