Ingredients
- 2 ¼ cups water
- 10 oz diced frozen chicken breast
- 2 cups instant brown rice
- 2 tablespoons sesame oil
- 2 tablespoons minced garlic
- 1 lb roast, steak, and pizza topping vegetables (sliced fresh mushrooms, onions, and bell peppers)
- ¾ cup stir-fry sauce
Steps
- Bring water to boil in medium saucepan for rice. Place chicken in microwave-safe dish; cover and microwave on HIGH 5 minutes to thaw.
- Stir rice into boiling water. Reduce heat to low, cover, and simmer 10 minutes.
- Preheat large sauté pan (or wok) on high 2–3 minutes. Place oil and garlic in pan (pan should sizzle). Add vegetables and cook, stirring occasionally, 6 minutes.
- Drain chicken, if needed, and add to pan; sauté 2 minutes. Add stir-fry sauce and cook, stirring continuously, 2 minutes until liquid reduces slightly. Serve chicken over rice.
