Chicken Caesar Salad

Ingredients

  • Aluminum foil
  • 2 romaine hearts
  • 1 lb boneless, skinless chicken breasts (or fillets)
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme leaves
  • ½ teaspoon kosher salt
  • ¼ cup Caesar dressing
  • ½ cup Caesar-flavored croutons
  • ¼ cup shredded Parmesan cheese

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Cut romaine into bite-size piece (about 6 cups); rinse and dry well.
    2. Place chicken on baking sheet and coat with oil, garlic powder, thyme, and salt (wash hands). Bake 20–25 minutes until chicken is browned and 165°F.
    3. Place romaine, dressing, croutons, and Parmesan in salad bowl; toss to combine. Slice chicken and arrange on salad. Serve.
