Chicken and Hummingbird Waffles with Banana-Bourbon Syrup

Ingredients

    • For waffles
    • ¼ cup unsalted butter
    • 4 large eggs
    • 2 cups buttermilk
    • ¼ cup light brown sugar
    • ½ teaspoon cream of tartar
    • 2 cups all-purpose flour
    • 3 teaspoons baking soda
    • ½ teaspoon kosher salt
    • 1 teaspoon ground cinnamon
    • ¾ cup chopped pecans
    • 1 teaspoon vanilla extract
    • Cooking spray
    • 2 lb hot Deli chicken tenders
    • For syrup
    • 2 large bananas
    • 3 tablespoons unsalted butter
    • 3 tablespoons bourbon
    • 1 cup maple syrup
    • 1 ½ teaspoons vanilla extract
    • ½ teaspoon ground cinnamon

    Steps

      1. Prepare waffles. Preheat waffle iron following manufacturer's instructions; melt butter. Separate eggs, placing yolks and whites in separate bowls. Whisk egg yolks, buttermilk, and brown sugar until blended. Beat egg whites and cream of tartar with electric mixer until stiff peaks form.
      2. Combine flour, baking soda, salt, and cinnamon in large bowl. Add egg yolk mixture, pecans, melted butter, and vanilla; stir until blended. Fold egg whites into batter until thoroughly combined.
      3. Coat waffle iron with spray. Pour ¾ cup batter into waffle iron; cook 3–4 minutes until crisp and 160°F. Repeat with remaining batter. Cover waffles to keep warm.
      4. Prepare syrup. Peel bananas; slice into ½-inch-thick rounds. Melt butter in large, nonstick sauté pan on medium. Add banana slices in single layer; cook 2 minutes or until golden. Flip bananas over and cook 1 more minute, then transfer to plate. Repeat with remaining banana slices, if needed.
      5. Remove pan from heat; add bourbon, then return to heat and let simmer 1 minute. Add maple syrup, vanilla, and cinnamon; cook 2–3 minutes until syrup is hot, then stir in bananas. Top each waffle with 2 chicken tenders and drizzle with banana-bourbon syrup; serve.
