Chicken and Bacon Calzones with Hot Honey

Ingredients

  • 1 (13.8 oz) refrigerated rolled pizza crust
  • Parchment paper
  • Cooking spray
  • 1 cup fresh (or frozen) fully cooked chicken breast strips
  • 2 oz Parmesan cheese
  • ½ cup sliced pepperoncini peppers
  • 4 slices bacon
  • ½ cup diced fresh red onions
  • ¾ cup whole milk ricotta cheese
  • 6 oz shredded cheddar cheese
  • ½ teaspoon crushed red pepper (optional)
  • 1 large egg
  • 1 teaspoon water
  • ¼ cup hot honey
  • Marinara sauce (optional, for serving)

Steps

    1. Preheat oven to 400°F. Line baking sheet with parchment paper, then coat parchment with spray. Thaw chicken if needed. Grate Parmesan (½ cup). Drain pepperoncini.
    2. Cook bacon until crisp following package instructions. Drain, let stand to cool, and chop coarsely.
    3. Combine in large bowl: chicken, bacon, pepperoncini, onions, ricotta, cheddar, ¼ cup Parmesan, and red pepper, if using. Whisk egg and water in small bowl until blended.
    4. Unroll dough, cut into 4 equal rectangles, and arrange on baking sheet. Place one-fourth chicken mixture on one-half of each dough rectangle, leaving ½ inch border. Brush edges with egg mixture and fold dough over filling, crimping edges to seal. Brush tops with remaining egg mixture, then cut slit in top of each calzone to vent. Sprinkle with remaining ¼ cup Parmesan.
    5. Bake 18–23 minutes until crust is golden and filling is 165°F. Remove from oven and let stand to cool 10 minutes. Drizzle with honey and serve with warm marinara sauce, if using.
