Chex-ed Up Baked Meatballs

Ingredients

  • Cooking spray
  • Parchment paper
  • ½ bag Savory Cheddar Chex Mix Snack Mix
  • 2 cups General Mills Wheat Chex cereal
  • 3 large eggs, divided
  • 2 tablespoons olive oil
  • 2 teaspoons garam masala
  • ¾ teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • ½ cup whole milk ricotta cheese
  • 1 lb ground beef
  • 1 (14.1 oz) jar butter chicken cooking sauce (optional, for serving)

Steps

    1. Preheat oven to 425°F. Spray baking sheet and line baking sheet with parchment paper; set aside. Add Chex mix to bowl of food processor; pulse until ground. Transfer to large bowl and set aside. Add Chex cereal to bowl of food processor; pulse until ground. Transfer ground cereal to shallow dish and reserve.
    2. Beat 2 eggs and olive oil in medium bowl until blended. Add to large bowl with Chex mix: garam masala, salt, pepper, ricotta, and remaining 1 egg. Mix well; stir in beef and mix until just blended.
    3. Divide beef mixture into 12 even portions; roll each portion into a meatball. Dip each meatball into beaten eggs (allow excess to drip off); coat in ground cereal (pressing to adhere). Arrange coated meatballs in single layer on prepared baking sheet.
    4. Bake 15–20 minutes until 160°F. Remove from oven and set aside to rest 5 minutes; serve with warm butter chicken sauce.
