Cheesy White Bean Buffalo-Style Dip

Ingredients

  • 4 oz cream cheese
  • Cooking spray
  • 2 (15.5 oz) cans mild white chili beans, divided
  • ½ cup sour cream
  • ½ cup Buffalo wing sauce
  • 1 cup shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • ½ cup sliced fresh green onions, divided
  • 2 tablespoons fresh cilantro
  • Crackers (optional for serving)

Steps

    1. Set cream cheese out to soften. Preheat oven to 375°F. Coat 10-inch cast-iron skillet (or 9-inch square baking dish) with spray.
    2. Place 1 can beans (do not drain), cream cheese, sour cream, and wing sauce in food processor bowl; process until smooth. Remove mixture and place in large bowl.
    3. Add to bowl: ½ cup mozzarella cheese, ½ cup cheddar cheese, ⅓ cup green onions, and remaining 1 can of beans (do not drain); stir to blend. Spoon into skillet and spread evenly.
    4. Top with remaining ½ cup each mozzarella and cheddar cheeses; bake 25–30 minutes until mixture is bubbly and top is golden along edges. Chop cilantro finely; sprinkle cilantro and remaining green onions over dip. Serve hot with crackers, if using.
