Cheesy Chicken and Broccoli Pot Pie

Ingredients

  • 1 sheet frozen puff pastry
  • Nonstick aluminum foil
  • 8 oz chunk Colby Jack cheese
  • 1 chilled Deli oven-roasted chicken
  • 2 cups fresh (or frozen) broccoli florets
  • 1 tablespoon vegetable oil
  • 10 oz frozen seasoning blend (diced onions, bell peppers, celery, and parsley)
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 4 oz chive & onion cream cheese spread
  • 1 tablespoon chicken bouillon base
  • 1 teaspoon yellow mustard
  • 1 frozen deep-dish piecrust
  • 1 large egg

Steps

    1. Set puff pastry out to thaw. Preheat oven to 400°F. Line baking sheet with foil. Shred cheese. Shred chicken (breast meat only; 2 cups). Chop broccoli into bite-size pieces.
    2. Preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan, then stir in seasoning blend. Cook and stir 2–3 minutes until vegetables have softened. Sprinkle in flour; cook and stir 1 minute. Stir in milk, cream cheese, bouillon base, and mustard until sauce is combined and thickened.
    3. Remove from heat; stir in cheese, chicken, and broccoli until cheese has melted. Place piecrust on baking sheet to catch any drips; pour filling evenly into piecrust. Starting from 1 long end, cut puff pastry into 8 equal strips. Arrange overlapping strips across pie, forming lattice. Beat egg and brush over puff pastry.
    4. Bake 40–50 minutes until filling is bubbly, top is golden, and center is 165°F. (If crust is browning too quickly, cover edges with foil during last 5–10 minutes of baking.) Let stand 30 minutes before serving.

    Chef's Tip: Don't want to create a lattice design? Lay puff pastry over top of pie, crimp edges to seal, and cut 2 or 3 slits on top to vent.
