Cheese-Stuffed Burgers

Ingredients

  • 1 small yellow onion
  • 2 lb ground chuck
  • 2 tablespoons Worcestershire sauce
  • 4 slices thick American cheese
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • 4 Bakery hamburger buns
  • 8 slices cooked bacon
  • Toppings such as lettuce, sautéed onions, tomatoes, and pickles (optional)

Steps

    1. Preheat grill (or grill pan) on medium-high. Chop yellow onion finely (¼ cup). Mix ground chuck, onions, and Worcestershire sauce until just combined. Divide into 8 equal portions, then form into thin patties. Arrange cheese slices on 4 patties; top with remaining 4 patties and pinch edges to form tight seals (wash hands). Season burgers with salt and pepper.
    2. Place burgers on grill; cook 3–4 minutes on each side until 160°F. Remove from grill and let stand 5 minutes to rest.
    3. Toast buns if desired. Heat bacon following package instructions. Place burgers on buns; add bacon and desired toppings. Serve.

Easy Barbecue Pork

Ingredients

  • 1 Boston butt pork shoulder (3–4 lb)
  • 2 cups apple juice (or cider)
  • ½ cup apple cider vinegar
  • ¼ cup Worcestershire sauce
  • 3 tablespoons barbecue rub (or seasoning), divided
  • Aluminum foil
  • 18 oz barbecue sauce (+ more, optional for serving)

Steps

    1. Preheat oven to 350°F. Place pork fat-side up in roasting pan (wash hands). Combine apple juice, vinegar, and Worcestershire sauce; pour mixture over pork, then coat pork on all sides with 2 tablespoons barbecue rub (wash hands).
    2. Cover pan tightly with foil; bake 3–4 hours until pork is 200°F and very tender. Remove from oven and let stand to cool slightly.
    3. Shred pork, then return to pan and toss with pan juices, barbecue sauce, and remaining 1 tablespoon barbecue seasoning. Bake 10 more minutes until sauce is hot. Serve with mac and cheese or your favorite side dishes.

    Chef's Tip: Offer fun toppings on the side to build your own sandwiches on hamburger buns or slider rolls: pickle chips, red onions, sliced jalapeños, crispy onion rings, and barbecue sauces.
