Ingredients
- 1 (16 oz) cheddar cheese block
- 3 cloves garlic
- 1 cup pitted Kalamata olives
- 2 tablespoons capers
- 3 tablespoons fresh Italian parsley
- 2 tablespoons lemon juice
- 1 seedless cucumber
- 1(12 oz) package carrot sticks
- 1 (7.5 oz) box social crackers
- ½ cup seedless raspberry preserves
Steps
- Place cheese on flat surface; cut each corner off at a 90° angle, then slice cheese and arrange on decorative platter (or board).
- Place garlic, olives, capers, parsley, lemon juice, and oil in food processor bowl (or blender); process until finely chopped. Spread tapenade around cheese on platter. Cut cucumber in fourths lengthwise, then cut each fourth into 4-inch-long pieces. Garnish platter with cucumber slices, carrots, crackers, and raspberry preserves. Serve.
