Cheese Board with Olive Tapenade

Ingredients

  • 1 (16 oz) cheddar cheese block
  • 3 cloves garlic
  • 1 cup pitted Kalamata olives
  • 2 tablespoons capers
  • 3 tablespoons fresh Italian parsley
  • 2 tablespoons lemon juice
  • 1 seedless cucumber
  • 1(12 oz) package carrot sticks
  • 1 (7.5 oz) box social crackers
  • ½ cup seedless raspberry preserves

Steps

    1. Place cheese on flat surface; cut each corner off at a 90° angle, then slice cheese and arrange on decorative platter (or board).
    2. Place garlic, olives, capers, parsley, lemon juice, and oil in food processor bowl (or blender); process until finely chopped. Spread tapenade around cheese on platter. Cut cucumber in fourths lengthwise, then cut each fourth into 4-inch-long pieces. Garnish platter with cucumber slices, carrots, crackers, and raspberry preserves. Serve.
    Note: For a decorative touch, do not slice cheese, instead carve RIP on top to look like a coffin.
