Ingredients
- 6 oz sharp cheddar cheese, grated
- 2 serrano peppers, thinly sliced
- 2 tablespoons fresh chives, thinly sliced
- 2 ½ cups flour (plus more for dusting)
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- ¼ teaspoon pepper
- 2 teaspoons sugar
- 8 tablespoons unsalted butter, cubed
- 1 cup buttermilk
Steps
- Preheat oven to 450°F. Butter a baking sheet. Grate cheese; slice peppers and chives. Set aside.
- Whisk flour, baking powder, baking soda, salt, pepper, and sugar to combine. Add cubed butter; work it in with your fingertips, breaking down the butter and coating the little butter pieces with flour. When it looks like large crumbs, stir in cheese, peppers, and chives; make a well in the center. Pour in the buttermilk, fold the flour over it, and gently distribute the liquid throughout (do not overmix) it should look crumbly.
- Place the dough on a clean, floured work surface. Gently pat it out into a circle or rectangle. Use a 2-inch biscuit cutter to cut out little biscuits (or, just cut it up into pieces).
- Place the biscuits on the baking sheet; bake 12–14 minutes or until golden. Serve.
