Cheddar Serrano Biscuits

Ingredients

  • 6 oz sharp cheddar cheese, grated
  • 2 serrano peppers, thinly sliced
  • 2 tablespoons fresh chives, thinly sliced
  • 2 ½ cups flour (plus more for dusting)
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper
  • 2 teaspoons sugar
  • 8 tablespoons unsalted butter, cubed
  • 1 cup buttermilk

Steps

    1. Preheat oven to 450°F. Butter a baking sheet. Grate cheese; slice peppers and chives. Set aside.
    2. Whisk flour, baking powder, baking soda, salt, pepper, and sugar to combine. Add cubed butter; work it in with your fingertips, breaking down the butter and coating the little butter pieces with flour. When it looks like large crumbs, stir in cheese, peppers, and chives; make a well in the center. Pour in the buttermilk, fold the flour over it, and gently distribute the liquid throughout (do not overmix) it should look crumbly.
    3. Place the dough on a clean, floured work surface. Gently pat it out into a circle or rectangle. Use a 2-inch biscuit cutter to cut out little biscuits (or, just cut it up into pieces).
    4. Place the biscuits on the baking sheet; bake 12–14 minutes or until golden. Serve.
