Cheddar Scallion Biscuits

Ingredients

  • Cooking spray
  • ½ cup unsalted butter
  • 6 oz cheddar cheese
  • 2 ½ cups all-purpose flour (+ more for dusting)
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground red pepper
  • 2 teaspoons granulated sugar
  • ½ cup sliced fresh green onions
  • 1 cup buttermilk

Steps

    1. Preheat oven to 450°F. Coat baking sheet with spray. Cut butter into small cubes. Grate cheese (1 ½ cups).
    2. Whisk flour, baking powder, baking soda, salt, pepper, and sugar until blended. Add butter and combine with fingertips, breaking butter down to size of large crumbs.
    3. Stir in cheese and green onions, then make well in center. Pour in buttermilk, then stir flour in gently (do not overmix; it should look slightly crumbly).
    4. Dust work surface lightly with flour. Place dough on work surface and pat out to 1-inch-thick round. Cut out biscuits and arrange on baking sheet. Combine dough scraps, pat out, and cut biscuits as before.
    5. Bake 10–12 minutes until golden; serve.
