Ingredients

- ½ cup unsalted butter
- 6 oz cheddar cheese
- 2 ½ cups all-purpose flour (+ more for dusting)
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- ¼ teaspoon ground red pepper
- 2 teaspoons granulated sugar
- ½ cup sliced fresh green onions
- 1 cup buttermilk
Steps
- Preheat oven to 450°F. Coat baking sheet with spray. Cut butter into small cubes. Grate cheese (1 ½ cups).
- Whisk flour, baking powder, baking soda, salt, pepper, and sugar until blended. Add butter and combine with fingertips, breaking butter down to size of large crumbs.
- Stir in cheese and green onions, then make well in center. Pour in buttermilk, then stir flour in gently (do not overmix; it should look slightly crumbly).
- Dust work surface lightly with flour. Place dough on work surface and pat out to 1-inch-thick round. Cut out biscuits and arrange on baking sheet. Combine dough scraps, pat out, and cut biscuits as before.
- Bake 10–12 minutes until golden; serve.
