Ingredients
- ¾ cup buckwheat flour baking mix
- 2 teaspoons dry mustard powder
- ⅔ cup whole milk
- 2 tablespoons chives, finely chopped and divided
- 1 cup Deli Imported Aged Cheddar Cheese, shredded
- ½ teaspoon kosher salt
- 2 large egg whites
- Cooking spray
- ¼ cup crème fraiche (or sour cream)
- 4 oz smoked salmon, finely diced
Steps
- Combine flour and dry mustard; whisk in milk until smooth. Stir in 1 tablespoon chives, cheese, and salt. Beat egg whites until firm peaks form; fold egg whites into cheese batter.
- Coat large, nonstick sauté pan with spray; heat on medium 2–3 minutes. Spoon tablespoon-size mounds of batter, in batches, into pan (leaving space between); cook 1–2 minutes or until bubbles form around edges. Flip and cook 30 seconds, then remove.
- Stir remaining chives into crème fraiche. Top each blini with salmon and chive crème fraiche.
Other Preparation Methods
- Appetizer: Slice cheese, then place on a whole wheat cracker. Top with apple butter and chopped sage.
- Side: Shred 1 cup cheese and stir into favorite stuffing/dressing mixture, then prepare as directed.
