Ingredients
- Parchment paper
- 2 (15.5 oz) cans chickpeas
- 4 cloves garlic
- 3 tablespoons canola oil
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- ¼ teaspoon ground cumin
- ½ teaspoon kosher salt
- 1 lemon, for juice
- 1 large plum tomato
- 1 shallot
- ½ bunch fresh cilantro
- 1 small, fresh jalapeño pepper
- 2 green onions
Steps
- Preheat oven to 375°F. Line baking sheet with parchment paper. Drain and rinse chickpeas; chop garlic finely. Combine in medium bowl: oil, garlic, chili powder, garam masala, cumin, and salt; stir until blended. Add chickpeas and toss to coat.
- Spread chickpea mixture in single layer on prepared baking sheet; bake 35–40 minutes, stirring halfway through cook time, until chickpeas are crispy. Let stand to cool to room temperature.
- Meanwhile, juice lemon (2 tablespoons). Chop tomato, shallot, and cilantro finely; chop jalapeño finely, removing membranes and seeds if desired. Slice green onions thinly (⅓ cup). Combine in large bowl: lemon juice, tomatoes, shallots, cilantro, jalapeños, and green onions until blended. Stir (fold) in chickpeas. Serve.
