Ingredients
- 4 cups shaved (or riced) cauliflower (about 1 head)
- ½ cup carrots, shredded
- 2 tablespoons shallots, finely chopped
- ½ cup dried cranberries
- ⅔ cup reduced-fat mayonnaise
- ⅓ cup plain Greek nonfat yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- ¼ teaspoon kosher salt
- ¼ teaspoon crushed red pepper
Steps
- Shred carrots; chop shallots. Whisk mayonnaise, yogurt, mustard, honey, salt, and pepper flakes until blended.
- Combine all ingredients and toss to coat. Chill 30 minutes; serve.
