Cauliflower Slaw

Ingredients

  • 4 cups shaved (or riced) cauliflower (about 1 head)
  • ½ cup carrots, shredded
  • 2 tablespoons shallots, finely chopped
  • ½ cup dried cranberries
  • ⅔ cup reduced-fat mayonnaise
  • ⅓ cup plain Greek nonfat yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • ¼ teaspoon kosher salt
  • ¼ teaspoon crushed red pepper

Steps

    1. Shred carrots; chop shallots. Whisk mayonnaise, yogurt, mustard, honey, salt, and pepper flakes until blended.
    2. Combine all ingredients and toss to coat. Chill 30 minutes; serve.
    Note: To make riced cauliflower, cut cauliflower into florets and place in food processor bowl; pulse finely until chopped and resembles rice.
