Cauliflower Gnocchi and Turkey Bacon Sauté

Ingredients

  • 1 lemon, for juice
  • 4 slices uncured turkey bacon
  • 3 tablespoons olive oil
  • 1 cup diced fresh yellow onion
  • 1 teaspoon Italian seasoning
  • 1 (10 oz) package frozen cauliflower gnocchi
  • ½ cup chicken broth (or stock)
  • ½ teaspoon kosher salt
  • ½ cup frozen peas
  • 3 tablespoons grated Parmesan cheese

Steps

    1. Juice lemon (3 tablespoons). Cut bacon into ½-inch pieces (wash hands). Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Add oil and bacon to pan; cook 4–5 minutes, stirring occasionally, until crisp. Remove bacon with slotted spoon, reserving drippings in pan.
    2. Add onions and Italian seasoning to same pan; cook 2 minutes, stirring occasionally. Add frozen gnocchi to pan; cook 4–5 minutes, stirring occasionally, until gnocchi thaws and begins to brown.
    3. Reduce heat to medium. Pour broth, lemon juice, and salt into gnocchi mixture. Cook 2–3 minutes until mixture thickens slightly and gnocchi are hot and tender.
    4. Stir in Parmesan, peas, and reserved bacon. Cook 1 more minute until peas are hot. Serve.
