Ingredients
- 1 lemon, for juice
- 4 slices uncured turkey bacon
- 3 tablespoons olive oil
- 1 cup diced fresh yellow onion
- 1 teaspoon Italian seasoning
- 1 (10 oz) package frozen cauliflower gnocchi
- ½ cup chicken broth (or stock)
- ½ teaspoon kosher salt
- ½ cup frozen peas
- 3 tablespoons grated Parmesan cheese
Steps
- Juice lemon (3 tablespoons). Cut bacon into ½-inch pieces (wash hands). Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Add oil and bacon to pan; cook 4–5 minutes, stirring occasionally, until crisp. Remove bacon with slotted spoon, reserving drippings in pan.
- Add onions and Italian seasoning to same pan; cook 2 minutes, stirring occasionally. Add frozen gnocchi to pan; cook 4–5 minutes, stirring occasionally, until gnocchi thaws and begins to brown.
- Reduce heat to medium. Pour broth, lemon juice, and salt into gnocchi mixture. Cook 2–3 minutes until mixture thickens slightly and gnocchi are hot and tender.
- Stir in Parmesan, peas, and reserved bacon. Cook 1 more minute until peas are hot. Serve.
