Cast-Iron Skillet Fish

Ingredients

  • 4 (6 oz) firm white fish fillets (such as cod, grouper, or catfish; about 1 ½ lb)
  • 2 teaspoons creole seasoning
  • 2 tablespoons quick-mixing flour
  • 2 tablespoons canola oil
  • 2 tablespoons unsalted butter
  • 1 lemon, for wedges

Steps

    1. Preheat cast-iron skillet on medium 3–5 minutes. Cut lemon into wedges. Season each fillet with ½ teaspoon creole seasoning. Place flour in shallow bowl; dip fish in flour, coating both sides (wash hands).
    2. Place oil and butter in skillet, then add fish. Fry 4–6 minutes on each side until centers of fillets flake easily and are 145°F. Serve with lemon wedges.
