Cashew Broccoli Barley Salad in a Jar

Ingredients

For preparing the jars
  • 2 cups quick-cooking barley
For the gift jars
  • 1 (12-oz) bag fresh stir-fry vegetables (broccoli florets and slaw, carrots, snow peas), coarsely chopped
  • ⅓ cup fresh basil, coarsely chopped
  • ½ cup presliced green onions
  • ½ cup raw cashews
  • 1 (15-oz) can mandarin oranges in juice, drained
  • ¾ cup Asian ginger dressing
  • 6 (1-quart) mason jars with lids

Steps

  1. To prepare the jars
  2. Prepare barley following package instructions. Chill 5 minutes to cool.
  3. To assemble gift jars
    1. Chop vegetables and basil. Layer even amounts of all ingredients evenly into jars starting with barley and finishing with dressing*.
    2. Place lid tightly on jar and give as gift.
    3. NOTE*: The dressing can be added as the top layer or can be placed in a small 2-oz jar (or container) and given with gift jars.
