Ingredients
For preparing the jars
- 2 cups quick-cooking barley
For the gift jars
- 1 (12-oz) bag fresh stir-fry vegetables (broccoli florets and slaw, carrots, snow peas), coarsely chopped
- ⅓ cup fresh basil, coarsely chopped
- ½ cup presliced green onions
- ½ cup raw cashews
- 1 (15-oz) can mandarin oranges in juice, drained
- ¾ cup Asian ginger dressing
- 6 (1-quart) mason jars with lids
Steps
- To prepare the jars
- Prepare barley following package instructions. Chill 5 minutes to cool.
- To assemble gift jars
- Chop vegetables and basil. Layer even amounts of all ingredients evenly into jars starting with barley and finishing with dressing*.
- Place lid tightly on jar and give as gift. NOTE*: The dressing can be added as the top layer or can be placed in a small 2-oz jar (or container) and given with gift jars.
