Ingredients
- 1 lb fresh carrots
- ⅓ cup butter
- 3 large eggs (or ¾ cup egg substitute)
- ½ cup sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Steps
- Preheat oven to 350°F. Cut carrots into ¼-inch-thick slices, then combine with butter and cover; microwave on HIGH for 7–8 minutes or until tender.
- Process carrots in food processor with remaining ingredients; transfer to baking dish. Bake 30–40 minutes or until toothpick inserted in center comes out clean. Let stand 5 minutes; serve. (Makes 8 servings.)
