Ingredients
- 1 lb fresh carrots
- ½ cup nut medley (such as cashews, almonds, and shelled pistachios)
- 3 tablespoons ghee (clarified butter)
- ¼ cup whole milk
- 6 tablespoons sweetened condensed milk
- ¼ teaspoon ground cardamom
- ½ cup raisins
Steps
- Peel and shred carrots (3 packed cups). Chop nuts coarsely. Melt ghee in large, nonstick sauté pan on medium. Add carrots and cook 8–10 minutes, stirring occasionally, until dry.
- Add whole milk; cook and stir 2 minutes. Reduce heat to low; stir in condensed milk, cardamom, raisins, and nuts. Cook and stir 2–3 more minutes until mixture thickens. Serve warm.
