Carrot-Nut Halwa

Ingredients

  • 1 lb fresh carrots
  • ½ cup nut medley (such as cashews, almonds, and shelled pistachios)
  • 3 tablespoons ghee (clarified butter)
  • ¼ cup whole milk
  • 6 tablespoons sweetened condensed milk
  • ¼ teaspoon ground cardamom
  • ½ cup raisins

Steps

    1. Peel and shred carrots (3 packed cups). Chop nuts coarsely. Melt ghee in large, nonstick sauté pan on medium. Add carrots and cook 8–10 minutes, stirring occasionally, until dry.
    2. Add whole milk; cook and stir 2 minutes. Reduce heat to low; stir in condensed milk, cardamom, raisins, and nuts. Cook and stir 2–3 more minutes until mixture thickens. Serve warm.
