Carne Asada with Salsa and Zesty Pinto Beans

Carne Asada with Salsa

Ingredients

  • 1 lean grilling steak (such as flank, top round, or sirloin; about 2 lb)
  • 2 teaspoons minced garlic
  • 2 teaspoons complete seasoning
  • 2 tablespoons extra-virgin olive oil
  • 1 lime, for juice
  • 1 ripe Hass avocado
  • ½ cup mild fresh salsa

Steps

    1. Preheat large sauté pan on medium-high 2–3 minutes. Rub both sides of steak with garlic and seasoning (wash hands). Place oil in pan, then add steak; cook 3–4 minutes on first side until well-browned.
    2. Squeeze juice of one-half lime over steak. Flip steak and cook 3–4 minutes on second side until steak is 170°F (well done).
    3. Cut avocado into quarters, scoop out flesh, and cut into bite-size pieces.
    4. Remove steak from pan; squeeze juice of remaining half lime over steak. Let stand 5 minutes; top with avocado and salsa. Serve.

Zesty Pinto Beans

Ingredients

  • 2 tablespoons fresh cilantro
  • 2 cans pinto beans (15–16 oz each)
  • 1 (8 oz) can tomato sauce
  • 1 (8 oz) package diced fresh yellow onions
  • 2 teaspoons minced garlic
  • ½ teaspoon Complete seasoning

Steps

    1. Chop cilantro coarsely Combine all ingredients (except cilantro) in medium saucepan on medium; cook and stir 7–9 minutes until thoroughly heated.
    2. Remove pan from heat; stir in cilantro and serve. (Makes 6 servings.)

Serving Suggestions

  • Complete your meal with fresh salad blend, rice, and flan for dessert.
  • Add great fresh flavor to the beans by stirring in some of the fresh salsa just before serving.
