Ingredients
- 1 (20 oz) can pineapple tidbits in juice
- 1 cup white rice
- 1 ¼ cups water
- ¼ bunch green onions
- 2 tablespoons margarine
- ⅓ cup tri-pepper mix (diced fresh green, red, and yellow bell peppers)
- ½ teaspoon dried thyme
- ¾ teaspoon kosher salt
- ½ teaspoon pepper
- 2 tablespoons shredded unsweetened coconut
- ¼ teaspoon garlic powder
Steps
- Drain pineapple, reserving ¾ cup juice. Cook rice following package instructions using pineapple juice and water. Slice green onions thinly.
- Remove rice from heat; stir in green onions, margarine, tri-pepper mix, thyme, salt, pepper, coconut, and garlic powder. Serve.
