Ingredients
- 6 oz pineapple juice
- ½ cup vegetable oil
- 2 tablespoons soy sauce
- ½ cup dark brown sugar
- 1 tablespoon ground thyme
- 2 teaspoons ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- ½ teaspoon ground nutmeg
- 7 cloves garlic
- 1 habanero pepper
- 1 bunch green onions
- 2-inch piece fresh ginger
- 1 cut-up whole chicken (about 4 lb)
Steps
- Place all ingredients (except chicken) in food processor bowl (or blender); process until blended. Coat chicken with marinade (wash hands); cover and chill 2 hours (or overnight) to marinate.
- Preheat grill (or grill pan) on medium-high; discard marinade. Grill chicken 18–20 minutes, turning occasionally, until grill-marked and 165°F. Serve.
Note: Use caution when handling spicy peppers; gloves are recommended.
