Caramelized Onion Dip

Ingredients

  • 3 medium yellow onions (about 1 lb)
  • 1 shallot
  • 4 green onions
  • 0.5 oz fresh chives
  • 1 tablespoon unsalted butter (or ghee)
  • 1 teaspoon freshly cracked black pepper
  • ½ teaspoon dried thyme
  • 1 (1 oz) packet onion soup mix
  • 16 oz sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon apple cider (or red wine) vinegar
  • 9 oz tortilla (or potato) chips, for serving

Steps

    1. Slice yellow onions (about 3 cups), shallot, green onions, and chives thinly.
    2. Preheat large, nonstick sauté pan on medium 2–3 minutes. Place butter, yellow onions, shallots, pepper, and thyme in pan. Cook 12–15 minutes, stirring occasionally, until well browned (add small splashes of water if needed to prevent sticking). Remove caramelized onions from pan and chill 10 minutes.
    3. Meanwhile, combine in serving bowl: green onions, chives, soup mix, sour cream, mayonnaise, and vinegar. Stir in caramelized onions. Chill until ready to serve. Serve with chips for dipping.

    Chef's Tip: This dip is great served with sliced fresh vegetables, like carrots, celery, broccoli, and bell peppers.
