Campfire Caramel Pear Crisp

Ingredients

  • 6 ripe pears
  • 2 lemons
  • 7 tablespoons unsalted butter, divided
  • 4 (1.51 oz) packets apple-cinnamon instant oatmeal
  • 4 tablespoons brown sugar
  • 15 caramel squares

Steps

    1. Peel pears, if desired; core and slice. Squeeze lemons for juice (¼ cup). Cut 3 tablespoons butter into small cubes; place in a medium mixing bowl and add oatmeal and sugar. Mix thoroughly with fingers until incorporated and crumbly. Cut caramels in half; set aside.
    2. Place a medium cast iron skillet on an open fire over low to medium heat. Add remaining butter to skillet, followed by sliced pears; stir to melt butter and coat pears. (Skillet will be HOT. Use hot pads or oven mitts when handling).
    3. Remove from heat; top with caramel pieces and oatmeal crumble. Cover with lid (or aluminum foil).
    4. Return to fire; cook 12–15 minutes until pears have softened and crumb topping has cooked. Remove from heat carefully. Serve warm.
