Butternut Squash Risotto with Pecorino and Crisp Country Ham

Ingredients

  • 5 cups Swanson Unsalted Chicken Broth
  • 1 small butternut squash (about 3 lb)
  • ½ medium yellow onion
  • 3 cloves garlic
  • 1 tablespoon fresh chives
  • 4 oz Locatelli Pecorino Romano Cheese
  • 2 tablespoons canola oil
  • 1 cup dry white wine
  • 1 cup RiceSelect Arborio Italian-Style Rice
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • Reynolds Wrap Everyday Strength Nonstick Aluminum Foil
  • 1 package country ham biscuit slices (about 6 oz)

Steps

    1. Add broth to 2-quart saucepan; bring to simmer on medium, then reduce heat to low and cover to keep warm.
    2. Peel and halve squash; remove seeds and cut into ½-inch cubes (3 cups). Chop onion (1 cup) and garlic (1 tablespoon) finely, slice chives (1 tablespoon), and grate cheese (1 cup).
    3. Preheat medium stockpot on medium-high 4–5 minutes. Add oil, onions, and squash; cook 6–7 minutes, stirring occasionally, until vegetables begin to brown. Stir in garlic and continue cooking 1–2 more minutes. Pour wine into pan and loosen bits of food left on bottom; continue cooking and stirring 6–7 more minutes, until liquid has reduced almost completely.
    4. Add rice and stir to combine. Add ½ cup warm broth; cook and stir 4–5 minutes until most of the liquid has been absorbed. Continue adding warm broth to rice ½ cup at a time, stirring and letting liquid be absorbed between additions, until all broth has been added and rice is tender and creamy. Stir cheese, salt, and pepper into risotto and remove from heat.
    5. Meanwhile, place oven rack in middle position, preheat oven to broil on HIGH, and line baking sheet with foil. Arrange ham on sheet and broil 5–6 minutes. Turn ham over and broil 5–6 more minutes until crisp. Remove from oven and cool slightly before breaking ham into small pieces. Serve risotto topped with ham and garnished with chives.
