Butter-Bathed Green Beans

Ingredients

  • 4 cups water
  • 2 oz wedge Parmesan cheese, with rind
  • 4 cloves garlic
  • 1 cup Fairlife 2% Reduced Fat Ultra-Filtered Milk
  • 8 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • 1 ½ lb trimmed fresh green beans

Steps

    1. Bring 4 cups water to boil in large stockpot. Remove rind from Parmesan (reserve) and shred cheese (about ¼ cup). Smash garlic. Stir into pot: milk, butter, garlic, Parmesan rind, and salt; return to boil.
    2. Add green beans and reduce heat to medium. Cook 7–8 minutes until green beans are desired tenderness; drain. Arrange on serving platter and top with shredded cheese. Serve.
    Chef's Tip: Jazz up plain vegetables by cooking them in a flavorful butter and milk bath. This is great for corn on the cob, carrots, broccoli, and cauliflower florets.
