Buffalo-Style Grilled Chicken
Ingredients
- 1 tablespoon cornstarch
- 1 teaspoon seasoned salt
- Large zip-top bag
- 2 lb boneless, skinless chicken thighs
- ¼ cup Buffalo wing sauce
- Cooking spray
Steps
- Preheat 2-sided tabletop grill. Place cornstarch and seasoned salt in bag; seal and shake to mix. Add chicken (wash hands); seal and shake to coat. Add wing sauce; seal and knead bag to coat completely.
- Coat both sides of grill with spray. Place chicken on grill; close lid and grill 8–10 minutes, pressing lid down occasionally to sear chicken, until edges are crisp and chicken is 165°F. Serve.
Blue Cheese Spuds
Ingredients
- 1 tablespoon fresh chives
- 1 (24 oz) package refrigerated mashed potatoes
- 2 tablespoons crumbled blue cheese
- 2 teaspoons cooked bacon pieces
Steps
- Chop chives; combine with remaining ingredients in microwave-safe bowl.
- Cover and microwave on HIGH 4–5 minutes, stirring halfway through cook time, until hot. Stir and serve.
Serving Suggestions
- Complete your meal with celery sticks, garlic toast, and Key lime pie for dessert.
- Prepare a dipping sauce for the chicken by combining equal parts melted butter and Buffalo wing sauce.
