Buffalo-Style Grilled Chicken with Blue Cheese Spuds

Buffalo-Style Grilled Chicken

Ingredients

  • 1 tablespoon cornstarch
  • 1 teaspoon seasoned salt
  • Large zip-top bag
  • 2 lb boneless, skinless chicken thighs
  • ¼ cup Buffalo wing sauce
  • Cooking spray

Steps

    1. Preheat 2-sided tabletop grill. Place cornstarch and seasoned salt in bag; seal and shake to mix. Add chicken (wash hands); seal and shake to coat. Add wing sauce; seal and knead bag to coat completely.
    2. Coat both sides of grill with spray. Place chicken on grill; close lid and grill 8–10 minutes, pressing lid down occasionally to sear chicken, until edges are crisp and chicken is 165°F. Serve.

Blue Cheese Spuds

Ingredients

  • 1 tablespoon fresh chives
  • 1 (24 oz) package refrigerated mashed potatoes
  • 2 tablespoons crumbled blue cheese
  • 2 teaspoons cooked bacon pieces

Steps

    1. Chop chives; combine with remaining ingredients in microwave-safe bowl.
    2. Cover and microwave on HIGH 4–5 minutes, stirring halfway through cook time, until hot. Stir and serve.

Serving Suggestions

  • Complete your meal with celery sticks, garlic toast, and Key lime pie for dessert.
  • Prepare a dipping sauce for the chicken by combining equal parts melted butter and Buffalo wing sauce.
