Brussels Sprouts, Cranberry, and Quinoa Slaw

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 lb fresh Brussels sprouts
  • 1 cup dried sweetened cranberries
  • ⅔ cup chopped pecans
  • 1 orange, for juice
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper

Steps

    1. Prepare quinoa following package instructions.
    2. Remove ends from sprouts, cut in half, and slice thinly. Spread quinoa on a baking sheet to cool.
    3. Combine in large serving bowl: quinoa, sprouts, cranberries, and pecans until blended.
    4. Squeeze orange for juice (¼ cup). Whisk juice, oil, vinegar, salt, and pepper until blended. Pour dressing over quinoa mixture; toss to coat. Serve.
