Ingredients
- 1 cup quinoa
- 2 cups water
- 1 lb fresh Brussels sprouts
- 1 cup dried sweetened cranberries
- ⅔ cup chopped pecans
- 1 orange, for juice
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
Steps
- Prepare quinoa following package instructions.
- Remove ends from sprouts, cut in half, and slice thinly. Spread quinoa on a baking sheet to cool.
- Combine in large serving bowl: quinoa, sprouts, cranberries, and pecans until blended.
- Squeeze orange for juice (¼ cup). Whisk juice, oil, vinegar, salt, and pepper until blended. Pour dressing over quinoa mixture; toss to coat. Serve.
