Broccoli and Pepper Stir-Fry

Ingredients

  • 2 tablespoons sesame oil
  • 14 oz fajita mix (fresh sliced bell peppers and onions)
  • 12 oz fresh broccoli florets
  • 1 (10-oz) package frozen brown rice
  • ½ cup teriyaki sauce

Steps

    1. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place oil in pan, then add fajita mix; cook and stir 1 minute. Microwave rice following package instructions.
    2. Stir broccoli into stir-fry mixture; cook and stir 3–4 minutes or until vegetables are tender. Pour teriyaki sauce into pan; cook and stir 1 more minute. Serve stir-fry over rice.
Other Preparation Methods
    • Microwave: Place 3 cups broccoli florets in microwave-safe bowl with 1 tablespoon water. Cover and microwave on HIGH for 4–5 minutes or until tender. Stir in ¼ cup Italian dressing and ¼ cup grated Parmesan cheese.
    • Grill: Place 3 cups large broccoli florets in foil pouch; coat with 3 tablespoons olive oil and ½ teaspoon garlic-herb seasoning. Grill over indirect heat 20–25 minutes or until tender. Top with 3 tablespoons garlic-herb butter.
