Blueberry-Spinach Smoothie Bowls

Ingredients

  • 2 medium bananas
  • ¼ cup unsweetened coconut flakes
  • 1 cup fresh baby spinach
  • ¾ cup vanilla soy (or almond) milk, divided
  • 1 tablespoon chia seeds
  • 2 tablespoons vanilla whey protein powder (or protein collagen powder)
  • 1 tablespoon almond (or creamy peanut) butter
  • 1 ½ cups frozen (or fresh) blueberries, divided
  • ¼ cup sliced almonds
  • ½ cup oats and honey granola
  • 2 tablespoons whole milk plain Greek yogurt (optional)

Steps

    1. Peel 1 banana and cut into chunks; freeze 25 minutes (or overnight). Toast coconut if desired.
    2. Slice remaining banana thinly. Place spinach and ½ cup milk in blender (or food processor bowl); blend until smooth. Add frozen bananas, chia seeds, protein powder, almond butter, 1 cup blueberries, and remaining ¼ cup milk; blend until smooth.
    3. Divide mixture between serving bowls; top with rows of coconut, almonds, granola, sliced bananas, and remaining ½ cup blueberries. Dollop yogurt on top, if using; serve.
