Blueberry Chutney Turkey
Ingredients
- 1 lb turkey breast tenderloins
- ½ teaspoon lemon pepper seasoning
- 1 tablespoon extra-virgin olive oil
- 1 cup fresh blueberries (rinsed)
- ⅓ cup water
- ¼ cup mango chutney
- 1 tablespoon Dijon mustard
- 1 tablespoon jalapeño pepper jelly
Steps
- Preheat grill (or grill pan) on medium-high. Cut tenderloins into eight 1-inch-thick slices (medallion cut). Season with seasoning; drizzle oil over both sides of slices (wash hands).
- Place turkey on grill, using tongs; close lid (or cover with foil). Grill 5–6 minutes on each side and until turkey reaches 165°F. (Grills vary widely; adjust time as needed.)
- While turkey grills, heat remaining ingredients in small saucepan on medium-high. Cook 8–10 minutes, stirring often, until blueberries break up and flavors are well blended. Serve sauce over turkey.
Berry Bright Salad
Ingredients
- 1 (5-oz) bag spring mix salad blend
- 1 cup fresh blueberries
- ¼ cup chopped walnuts
- 3 tablespoons crumbled bleu cheese (about 1 ½ oz)
- 1 cup fresh strawberries
- ¼ cup raspberry vinaigrette
Steps
- Combine in salad bowl: spring mix, blueberries, walnuts, and bleu cheese until blended. Cut strawberries into bite-size pieces and add to salad.
- Toss with dressing and serve.
Fruit Crunch Parfaits
Ingredients
- 1 cup fresh strawberries
- ¼ cup part-skim ricotta cheese (about 2 oz)
- ¼ cup light sour cream
- 2 tablespoons honey
- 1 ½ cups aerosol whipped cream (+ extra for topping)
- ¼ teaspoon almond extract
- 1 ½ cups flake cereal with oat/fruit
- 1 cup fresh blueberries
Steps
- Slice strawberries thinly; set aside. Combine remaining ingredients (except cereal and blueberries) in medium bowl, whisking until smooth. Chill both until ready to serve.
- Layer half of cereal evenly into four parfait glasses. Then add half each of strawberries, blueberries, and cheese mixture; repeat layers. Top with extra whipped cream, if desired. Serve immediately.
